I have a spreadsheet where I embedded a chart on one of the worksheets. I
recently modified the worksheet (nothing in the chart or its associated
data) and now the chart is grayed out unless I select the chart object. It
prints grayed out, so it's not my video card.

What happened and, more importantly, how can I fix this?

Check your setting,

Tools > Options > View > Objects > Show All
