We have a PDA phone with ActiveSync that works great. But is it
possible to keep any email message deletions on the PDA from being
sent back to the Exchange Server? I know that kind of defeats the
purpose of "synchronizing," but it would be handy to delete a message
on the PDA knowing it would still be there when I get back to the office.

Currently there is no support to delete on the device and not delete it on
the server.

Just set up an "archive" folder, which is not synced to the device.
After the next sync, the folder will appear on the device but its
contents will not. Any items moved into the folder on the device will
be synced back to the server and then disappear from the device.
