They both do the same thing. The only real difference is that when
you see the record set in the server behaviors panel you may double
click it to edit it. If you see the record set in the bindings panel
you can click the plus sign to expand it, then you are able to drag
and drop the result fields of the query as well as specify formatting.

The Bindings panel lists data you have available. A Recordset is simply the data returned from a SQL query. Hence Bindings are a category and a Recordset is simply a type of Binding.
